Cheesy Chicken and Potato Casserole

1 box scalloped potatoes
4 potatoes, thinly sliced
shredded cheese
2 chicken breasts (cut into chunks)
3 teaspoons vegetable oil
1 can cream of chicken soup
1 can mushrooms.

Cook potatoes slightly before cutting (to insure fully cooked).

In a medium sauce pan over med-high heat, brown chicken.

Prepare scalloped potatoes as directed.

Stir in sliced potatoes, chicken, cream of chicken soup, and mushroom.

Bake at 350 degrees for 15 minutes, then add cheese to top and return to oven for another 10-15 minutes.
